Spencer's nan absolutely loves peanut cookies, it has become an ongoing joke to buy her a packet every year for Christmas. This year I decided to make her some peanut cookies instead. She gets something she likes plus I put time and effort into it, win win situation.
The recipe for these cookies is super easy and the end result is super yummy. You will need :
8 tbsp plain flour
2 tbsp caster sugar
2 tbsp crunchy peanut butter
1 egg yolk
Icing sugar for dusting
Pre-heat your oven to gas mark 4.
Place all of the ingredients except for the icing sugar into a large bowl and mix into a smooth dough.
Break of evenly sized pieces of the dough, flatten and using a cookie cutter of your choice punch out the shape that you want.
Place onto a baking tray lined with baking paper, gently press each cookie with the back of a fork and then place into the middle of the oven for 25 minutes (or until golden brown).
Transfer to a wire rack and leave to cool for 10 minutes.
Sprinkle with icing sugar and serve.
Makes approximately 12 cookies.
I transferred the cookies into Kilner jars, decorated with some pretty ribbon and jute string, added a luggage tag and gave out for thoughtful home-made Christmas presents.
