Recipe : Peanut Butter Cookies

Spencer's nan absolutely loves peanut cookies, it has become an ongoing joke to buy her a packet every year for Christmas. This year I decided to make her some peanut butter cookies instead. She gets something she likes plus I put time and effort into it, win win situation. Carry on reading for the recipe.

The recipe for these cookies is super easy and the end result is super yummy. You will need :

  • 8 tbsp plain flour
  • 2 tbsp caster sugar
  • 2 tbsp crunchy peanut butter
  • 1 egg yolk
  • 50g butter
  • Icing sugar for dusting

Pre-heat your oven to gas mark 4.

Place all of the ingredients except for the icing sugar into a large bowl and mix into a smooth dough.

Break of evenly sized pieces of the dough, flatten and using a cookie cutter of your choice punch out the shape that you want.

Place onto a baking tray lined with baking paper, gently press each cookie with the back of a fork and then place into the middle of the oven for 25 minutes (or until golden brown).

Transfer to a wire rack and leave to cool for 10 minutes.

Sprinkle with icing sugar and serve.

Makes approximately 12 cookies.

I transferred the cookies into Kilner jars, decorated with some pretty ribbon and jute string, added a luggage tag and gave out for thoughtful home-made Christmas presents.
