You will need :
1 finely chopped onion
500g turkey mince
Zest of 1 lemon
2 tsp of fresh thyme leaves or 1 tsp dried
2 tsbp chopped parsley
8 thin rashers streaky bacon
Buns & salad to serve (optional)
Heat the oven to Gas Mark 6.
Fry the onion until lightly browned and soft, leave to cool.
Mix the turkey mince, lemon zest, thyme, parsley fried onion and seasoning until well combined.
Shape the mixture into four burgers and wrap two bacon rashers around each. Put in a roasting tin and bake for 20 - 25 minutes in the center of the oven.
Either pan fry or barbecue for a few minutes on either side to crisp the bacon.
I finished mine off on the barbecue and served in a ciabatta roll with Slimming World style chips, I used this recipe for the chips which is one that I always use and swear by.
This is a super easy and super tasty recipe - I highly recommend it.
