If you follow me on Instagram and/or read my week in photos posts you will have noticed that I've really been enjoying experimenting with Slimming World friendly recipes. Both myself and Spencer have fallen in love with quite a few of the recipes, the champion so far being Big Mac in a Bowl. It tastes just like the real thing, has a low syn value on the Extra Easy plan and is really easy to make.
You will need :
500g extra lean minced beef (less than 5% fat)
1 large onion (chopped)
4 tbsp extra light mayonnaise
4 tbsp tomato ketchup
8 gherkins (chopped)
iceberg lettuce (shredded)
4 slices dairylea light cheese slices (if making for four people you may want to double this, I stick to two slices per person)
salt and pepper
Serves 4 (or two particularly
hungry/greedy adults in our experience)
Start by adding your minced beef and onions into a saucepan with a little fry light, fry on a medium heat until the meat has browned and the onions are soft.
While the meat is cooking mix together your extra light mayo and tomato ketchup to make your Thousand Island dressing and pile your shredded lettuce onto your plate/bowl in readiness.
Now it is just a simple case of piling the ingredients up. Add the beef and onion mixture onto the top of the lettuce...
Dollop your dressing over the meat mixture...
Add the gherkins...
And finally top with your cheese slices.
I like to serve mine with home made chips that I cut really thin and cover in salt. It is a McDonalds after all...
I use my cheese as my Healthy Extra A choice for the day, as a result the only thing I have to syn is the dressing, four syns for the ketchup and four for the mayo, eight syns for the whole thing so either four or two syns depending how many people you are splitting this between.
