Tonight I had a stodge fest for tea. Every single bit of it was completely Syn free on the Slimming World extra easy plan and it was all super easy to make.
The feast consisted of salmon fishcakes, onion rings and rice (I told you it was stodgy!).
To make the onion rings you will need:
Your desired amount of onions, one egg and a small amount of Smash.
Fry the onions in frylight until softened. Dip your onions in the whisked egg and then in the Smash until coated. You can add herbs/spices/seasoning to the Smash if you so wish. Pop in the middle shelf of the oven on Gas Mark 6 for twenty minutes. I have tried frying the coated onion rings but found they came out a lot nicer when oven cooked.
To make the fishcakes you will need :
Leftover mashed potatoes, a tin of salmon/tuna, onion, any desired seasoning, one egg and Smash.
Pop all of your ingredients in a food processor until smooth. Form the mixture into pattys and then coat in the Smash.
As with the onion rings pop these in the middle shelf of the oven at Gas Mark 6 for 20 minutes. I finished mine off under the grill for 5 minutes to brown them off.
I served mine with a packet of Syn free Bathchelors rice.
The great thing about both of these recipes is that they are easy, Syn free and really versatile. You could add a variety of flavours to both of them and really change the dish. With the fish cakes you could use cheese as your Healthy A and add that, you could also add lemon/chillies for a more powerful flavour.
